Mango and Salsa
Ingredients:
One ripe mango, peeled and cut into 1/4-inch dice
1/4 cup diced (1/4-inch) red onion
1/2 teaspoon minced, seeded jalapeno pepper
1 teaspoon minced garlic
1 tablespoon chopped fresh mint leaves
1 tablespoon lime juice
1 tablespoon olive oil
Salt and freshly ground black pepper to taste
Directions:
Fold all the ingredients together in a bowl with a rubber spatula.
Refrigerate, covered, for up to three hours before serving.
Recipe makes about 2-cups.
