Apricot Salad
Recipe Rumble

Ingredients:
One can (20-ounce) crushed pineapple
1/2 cup sugar
One large box apricot gelatin
One package (8 ounces) fat free cream cheese
One container Lite or Fat Free (12 ounces) Cool Whip

Directions:
Mix crushed pineapple, water and sugar in a pan and bring to a boil. Add gelatin and take off heat; stir until gelatin is dissolved. Let cool and add cream cheese. (A potato masher -- or blender -- works well to mash the cream cheese until most of it is dissolved). Refrigerate until mixture starts to thicken and congeal.

Stir in Cool Whip until it is all mixed together. Chill overnight.
