Enlightened Peach Duff Recipe Rumble
A "Duff" is a traditional steamed or boiled pudding.
Ingredients:
1/4 cup 30-percent less fat margarine
1 cup all-purpose, unbleached flour
3 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sugar
1 teaspoon cinnamon
1/8 teaspoon nutmeg
2/3 cup skim milk
1 teaspoon vanilla
4 to 6 peaches (about 1-1/2 pounds), peeled and thickly sliced

Directions:
Preheat oven to 375-degrees.
Melt the margarine in an 8-inch square baking pan. Sift together the flour, baking powder, salt, and sugar. Gradually add the milk and stir just until the flour mixture is moistened.
Spoon the batter evenly onto the melted margarine in the pan. Arrange the peach slices in rows on top of the batter. Bake for 35 minutes. Serve slightly warm.
Recipe makes six servings.
