Mock Potato Salad
Recipe Rumble

Ingredients:
One bag frozen cauliflower
Four hard boiled eggs, diced
Two ribs celery, sliced
Two slices onion, chopped
1 tablespoon dijon mustard
3-4 heaping tablespoons mayonnaise
Salt, pepper, dill to taste

Directions:
Cook cauliflower in microwave til soft, but not mushy. Drain well. Let cook and cut into small pieces. Mix with other ingredients. Chill two hours and serve. Recipe makes six servings

4.5 carbohydrates per serving.
One 1/2-cup serving equals 138 calories.
