Sweet Potatoes and Bananas in Rum
Ingredients:
2 small sweet potatoes, peeled
3 tablespoons margarine or Smart Balance
2 tablespoons packed dark brown sugar
1 large banana, peeled and sliced
2 tablespoons dark rum
1/4 teaspoon cinnamon
Fat Free Cool Whip for Topping
Directions:
Cut sweet potatoes lengthwise, in half; cut halves crosswise into 1/4 inch thick slices.
In 10 inch skillet over medium heat, melt butter, and cook sweet potato slices until tender and lightly browned, abut four to five minutes, stirring occasionally.
Stir in brown sugar until dissolved.
Add banana slices; cook one to two minutes until heated through.
Add rum and cinnamon; cook until mixture is thickened slightly.
Divide among dessert plates and garnish with fat free Cool Whip, if desired.
Recipe makes two servings.
