Mediterranean Eggplant PizzaIngredients:Two cans (7-1/2 ounces each) caponata One 12-inch prebaked pizza crust 8 ounces (2 cups) crumbled feta cheese, flavored or plain Directions: Preheat the oven to 450-degrees. While the oven is preheating, drain the caponata. Place the pizza crust on a large baking sheet and bake for five minutes. Spread the hot crust with the caponata and sprinkle with the feta. Bake eight to ten minutes, or until hot and bubbly. Recipe makes four servings.
