No Cook Garden Tomato SauceIngredients:1-1/2 pounds (four medium) ripe tomatoes, coarsely chopped, and their juice One large garlic clove, minced 3 tablespoons olive oil 2 tablespoons red wine vinegar or balsamic vinegar 1/2 teaspoon salt 1/4 teaspoon black pepper 1/2 cup coarsely chopped fresh basil (optional) Directions: In a bowl, mix together all of the ingredients except the basil. Set aside at room temperature for about one hour, or cover and refrigerate overnight. Stir in the basil just before serving. Recipe makes 4-1/2-cups (about four servings).
