Baked Potato Supreme
Healthy Recipe

Ingredients:
3 large baking potatoes
6 ounces shredded reduced or non-fat Cheddar cheese
1/4 cup light sour cream
1/2 pound broccoli flowerettes
3 tablespoons Bacon Bits (optional)

Directions:
Preheat the oven to 400-degrees. Wash potatoes, stab with fork or knife a few times, then bake in 400-degree oven for about 45 minutes or until done to desired softness. (To speed things up, you can also microwave the potatoes - about seven to eight minutes per side depending on size of potato.) Slice open long end of each potato and push ends toward middle with fingers to open the slit. Spread about 2-ounces of shredded Cheese into slit -- use a fork to push it down into potato.

Put hot steamed tender crisp broccoli flowerettes into potato. Top with a dollop of sour cream and about 1-tablespoon of bacon bits. Repeat for remaining potatoes. Recipe makes eight servings.
