School Days Fruit Roll Ups

Directions:
Line a jelly-roll pan with parchment or waxed paper; spray with vegetable cooking spray. Puree strawberries in a blender or food processor.
In a medium non-reactive saucepan, mix pureed strawberries and lemon juice over medium-high heat. In a small bowl, mix sugar and pectin; whisk into strawberry mixture. Bring mixture to a boil; boil for three minutes, whisking constantly.
Remove pan from heat. Ladle mixture into the prepared pan; spread in a thin, even layer. Let dry, uncovered overnight (it will still be slightly sticky). Sprinkle fruit with coconut, if desired. Cut fruit and parchment paper crosswise in 1-inch-wide strips. Roll up strips with parchment attached.
Wrap each roll in plastic wrap or parchment paper; store in an airtight container in the refrigerator.
Yields: 16 roll-ups.
Note: You can use almost any fresh fruit in these roll-ups. Raspberries, kiwis, blueberries, apples and peaches -- custom make them with your favorites.
