Avocado Tomatillo Salsa
Paleolithic Raw Food Recipe
This zesty Avocado Tomatillo Salsa will keep two days in an airtight container in the refrigerator.
2 ripe medium avocados, diced
1-1/2 teaspoon diced red bell pepper
1-1/2 teaspoon diced orange (or yellow) bell pepper
1 tablespoon sliced scallions
4 tomatillos, husked, rinsed and diced
1 clove garlic, minced
2 tablespoons chopped cilantro
2 serrano chiles, seeded and minced
2 teaspoons fresh lime juice
3 tablespoons olive oil (optional)
In a large bowl, combine avocados, bell peppers, scallion and half of the tomatillos. Stir to mix.
Add diced tomatoes to the mixture. Mush up 3 large ripe avocados. Add and mix thoroughly.
Add puree to vegetables in a bowl and serve. Will keep 2 days in an airtight container in the refrigerator.
Recipe makes 6 to 8 servings.
