Super Salad

Paleolithic Raw Food Recipe

Super Salad combines tomatoes, avocados, celery, peppers, bok choy stalks and optional greens for a super healthy salad.

Bok Choy in Super Salad


2 to 3 pounds of tomatoes
4 medium or large avocados (or 1 lb chopped or ground nuts or seeds)
4 stalks celery
4 large red (or green) bell peppers
2 pounds bok choy stalks and greens
Optional: 1 grapefruit

Recipe Directions

Dice the tomatoes, celery and the bell peppers.

Quarter, peel and dice the avocados.

Cut up the bok choy.

Place all ingredients in a bowl and mix together.

Optional: Squeeze the juice from the grapefruit and use for dressing.

Nutrition Information

Recipe makes 4 to 6 servings.
