
Almond Muffins

Not at all like your typical muffin, these use almond butter, raw almonds, coconut milk, shredded unsweetened coconut and eggs.
Recipe Ingredients
1 cup almond butter
1 cup sliced raw almonds
1 cup pure coconut milk
2 cups shredded unsweetened coconut
3 eggs

Recipe Directions
Beat all ingredients until combined and pour in muffin cups.
Cook at 400 degrees for 15 minutes.
Nutrition Nibble
Coconuts are one of the most nutritious of all fruits, but unfortunately in the United States they are also one of the most overlooked. Coconuts are not a traditional part of the American diet, but have been a staple food to many populations, such as island and Asian cultures, for centuries.
