Baked Bananas

Bored with bananas? Spice them up with this satisfying and healthy baked version. Orange rind, maple syrup and cinnamon pack in flavor.

Recipe Ingredients

3 small bananas, peeled
1/2 teaspoon grated orange rind
1/2 tablespoon pure maple syrup
1 tablespoon lemon juice
1/8 teaspoon salt
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
1 tablespoon olive oil, or melted coconut oil

Recipe Directions

Cut each banana crosswise into 8 pieces. Arrange banana slices in an 8-inch square baking dish. Sprinkle evenly with orange rind, maple syrup, juice, salt, and spices, drizzle with oil.

Bake uncovered at 350 degrees for 45 minutes, basting after 15 minutes with liquid in dish. Serve banana slices hot on wooden sticks.
