Orange Juice Muffins
Ingredients:
2 cups flour
1 cup Splenda Granular
2 teaspoons baking powder
1/8 teaspoon salt
1 cup orange juice
4 tablespoons margarine, melted
One egg, slightly beaten
1 teaspoon grated orange rind
Directions:
Combine flour, sweetener, baking powder and salt in a large bowl.
Add orange juice, margarine, egg and orange rind. Mix well.
Spray muffin tins with non-stick cooking spray. Fill tins 2/3 full.
Bake at 375-degrees for 20 to 25 minutes. Cool on wire rack.
Recipe makes nine muffins.
