Autumn Pumpkin Bread
Ingredients:
1/4 cup margarine, softened
1-1/2 cups spoon-able sugar substitute or 36 packets sweetener
Four egg whites
1/2 teaspoon orange extract
1 cup canned pumpkin
1-1/4 cup flour
2 teaspoons powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1-1/2 teaspoon cinnamon
3/4 teaspoon ginger
1/4 teaspoon nutmeg
1/2 cup raisins
3 tablespoons apricot spread-able fruit
1/4 cup chopped pecans
Directions:
Beat margarine, sweetener and egg whites until blended. Beat in extract and pumpkin. Mix in combined dry ingredients. Stir in pecans and raisins. Spread batter evenly into 8-inch loaf pan. Bake at 350-degrees for 50 to 60 minutes. Cool in pan five minutes; remove to cooling rack.
Heat spread-able fruit until melted in saucepan; brush on bread and garnish with pecans.
