Sugar-Free Banana Bread



Ingredients:
3/4 cup Sugar Twin
1/4 cup sugar
1/3 cup margarine or ¼-cup olive oil (extra light is best)
One egg
Two egg whites
1 teaspoon baking soda
2 cups flour
4 tablespoons milk
3/4 teaspoon vinegar
Three bananas - ripe, mashed

Directions:
Mix milk and vinegar together, let stand five minutes.

Meanwhile, blend Sugar Twin, sugar and margarine. Add egg and egg whites; mix well. Sift flour and baking soda into bowl and stir in. Add to mixture. Add milk and vinegar mixture. Fold in bananas. Bake one hour at 350-degrees in greased 9 x 5-inch loaf pan. Let cool.

Recipe makes 20 slices.

Notes:  If desired, reduce cholesterol to almost zero by using egg substitute equal to one egg in place of the whole egg.
Using olive oil reduces the fat to under 2g per serving and cholesterol to a trace.
