Light Macaroni and Cheese



Ingredients:
1-1/2 cup elbow macaroni
2 tablespoons butter
2 tablespoons flour
3/4 teaspoon salt
Dash pepper
2 cups skim milk
1-1/2 fat free Cheddar cheese, shredded

Directions:
Cook macaroni according to package directions; drain.

In saucepan, melt butter. Stir in flour, salt, pepper and milk. Cook, stirring, until thickened and bubbly. Stir in 1-cup cheese until melted.

Combine macaroni and sauce in buttered casserole dish. Sprinkle with remaining cheese and bake at 250-degrees 30 minutes.

Sprinkle with paprika, if desired.
