Fresh Strawberry Bread



Ingredients:
1 pint (2 cups) fresh ripe strawberries
1 cup all purpose flour
3/4 cup whole wheat pastry flour
1 teaspoon baking soda
Scant 1 teaspoon salt
1/4 teaspoon baking powder
1/2 cup sugar
1 large ripe banana
2 egg whites, lightly beaten until frothy
1/3 cup water

Directions:
Crush half the strawberries in a saucepan, and simmer over medium heat two minutes, stirring constantly. Slice rest of strawberries and mix w/the cooked berries. Chill.

Preheat oven to 350-degrees.

In a medium bowl combine all dry ingredients except the sugar.

In a larger bowl mash the banana. Mix the sugar in. Mix the egg whites and water in.

Add flour mixture to wet ingredients. Blend well. Add strawberries and pour into a nonstick bread pan (8-1/2 x 4-1/2-inch pan).

Bake for 40 minutes to one hour or until toothpick inserted in center comes out clean.

Cool for about ten minutes and gently pry off the sides and turn out onto racks to cool.
