Apple Coffee Cake

Streusel Topping:
2/3 cup Bisquick Reduced Fat baking mix
2/3 cup brown sugar
1/2 teaspoon nutmeg, or 1/4-teaspoon cinnamon and 1/4-teaspoon nutmeg
1/4 cup Smart Balance or other trans-fat free margarine
Mix together until crumbly. Set aside.
Cake:
2 cups Bisquick Reduced Fat baking mix
3 tablespoons sugar
2/3 cup skim milk or water
Two egg whites
Two medium cooking apples (about 2-cups), peeled, thinly sliced
Glaze:
1/2 cup powdered sugar
2 to 3 tablespoons skim milk
Directions:
Heat oven to 400-degrees. Grease square 9 x 9-inch baking pan.
Mix baking mix, milk, sugar and egg whites; beat vigorously 30 seconds. Spread half of the batter in pan. Arrange apple slices on batter; sprinkle with ½ of the streusel topping. Spread remaining batter over apple slices; sprinkle with remaining streusel. Bake 25 minutes or until toothpick inserted in center comes out clean. Cool.
Glaze:
Mix powdered sugar and skim milk until smooth and drizzling consistency. Drizzle over coffee cake.
Recipe makes eight to ten servings.
