Coffee Cake

Streusel Topping:
1/3 cup packed brown sugar
1/2 teaspoon cinnamon
Coffee Cake:
1-3/4 cup Bisquick Reduced Fat baking mix
3/4 cup skim milk
1/4 cup sugar
1 tablespoon margarine, melted (or 1-tablespoon olive oil)
One egg or two egg whites
Directions:
Heat oven to 375-degrees. Grease 9-inch round cake pan.
Mix the streusel topping ingredients until crumbly; set aside.
Stir coffee cake ingredients until blended. Spread in pan; sprinkle with Streusel topping. Bake 18 to 23 minutes or until golden brown.
Recipe makes eight to ten servings.
