Chocolate Covered Peppermint Patties

Here's a great peppermint candy recipe for mint lovers.

Ingredients:
1 cup mashed potatoes
7 cups confectioners' sugar
1 teaspoon salt
2 tablespoons melted butter
2 teaspoons peppermint extract
8 (1 ounce) squares semisweet chocolate
2 tablespoons shortening

Directions:
Cream together the potatoes, sugar, salt, butter and peppermint. Knead slightly and roll into cherry size balls. Extra icing sugar may be needed depending upon the dampness of the potatoes.

Flatten balls to form patties and allow to dry overnight. Melt semi-sweet chocolate and paraffin in top of double boiler. Mix well and keep melted over hot water (Do not allow water to boil). Dip patties in chocolate and let cool on wax paper.
