Rock Candy

Candy Jar

Ingredients:
3-3/4 cups sugar
1-1/4 cup light corn syrup
1 cup water

Directions:
Add all ingredients to a pot and bring to a boil at a temperature of 290-degrees (testing with a candy thermometer), then add one teaspoon of gourmet candy flavoring of choice. Have three large cookie sheets filled with powdered sugar (about three to four pounds).

Make furrows in the powdered sugar, pour the hot syrup into the furrows (made with the finger) and cut pieces (approximately 1/4-inch chunks) with scissors as soon as it can be handled.

Drop cut pieces randomly into powdered sugar and toss. Place powdered sugar and pieces from the tray into asifter and sift vigorously until most of the powdered sugar has been removed from the candy. Repeat process for each flavor.

Traces of powdered sugar will remain on candy creating a frosty appearance. Place in a bowl for final cooling, stirring occasionally, then fill jars.

Tips:
To prevent a mess, place thick bath towels on the table to absorb powdered sugar and use cookie sheets with sides.
*Decorative jars make nice gifts. Cover with lids and keep for the holidays or to present as gifts.
