Lemon Ice Healthy Recipe

1 lemon, juiced and zested
1 lemon, juiced
2 cups white sugar
4 cups skim or 1-percent milk

In a medium bowl, stir together lemon juice and zest with sugar until smooth. Stir in milk. Pour into a 9 x 9-inch dish and place in freezer, stirring once when it begins to harden, until firm, two hours.

Add soup, salsa or picante, water, tortillas and half the cheese. Heat to a boil. Alternatively, pour into the freezer canister of an ice cream maker and freeze according to manufacturers' directions.

Recipe makes ten servings.

Note: This recipe can be made with or without an ice cream maker. It's a fun one to play around with -- try making it with oranges, limes or grapefruit, and top with fresh fruit for "summer in a bowl".
