Warm Potato Salad
Low Salt Recipe

Ingredients:
1 pound small red potatoes, scrubbed
1-1/2 tablespoon. white wine vinegar
1/4 cup olive oil
Three shallots, finely sliced
3 tablespoons cilantro or parsley, chopped
One red bell pepper, seeded and finely diced
One yellow bell pepper, seeded and finely diced
1/4 teaspooon salt, optional

Directions:
Boil whole potatoes in salted water 20 minutes or until tender. Drain and rinse potatoes under cold water until just cool enough to handle. Drain again. Cut potatoes into 1/4-inch slices and place in a salad bowl.

Combine vinegar and oil in a small bowl, whisking constantly, until emulsified. Add remaining ingredients and pepper to taste to potatoes.

Pour dressing over salad and toss. Recipe makes 4 low salt/low sodium servings.
