Warm Potato Salad

Red potatoes are used for this potato salad served warm with shallots, peppers and cilantro or parlsey for seasoning.

Recipe Ingredients

1 pound small red potatoes, scrubbed
1-1/2 tablespoon white wine vinegar
1/4 cup olive oil
3 shallots, finely sliced
3 tablespoons cilantro or parsley, chopped
1 red bell pepper, seeded and finely diced
1 yellow bell pepper, seeded and finely diced
1/4 teaspooon salt, optional

Recipe Directions

Red Potatoes Boil whole potatoes in salted water 20 minutes or until tender. Drain and rinse potatoes under cold water until just cool enough to handle. Drain again. Cut potatoes into 1/4-inch slices and place in a salad bowl.

Combine vinegar and oil in a small bowl, whisking constantly, until emulsified. Add remaining ingredients and pepper to taste to potatoes.

Pour dressing over salad and toss.
