Low Sodium Recipe
Spiced Applesauce with Granny Smith and Golden Delicious apples spiced just right with cinnamon and cardamom.
11 ounces Granny Smith apples, peeled and sliced
11 ounces Golden Delicious apples, peeled and sliced
2/3 cup water
2 teaspoons fresh lemon juice
2 tablespoons plus 2-teaspoons sugar
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cardamom
Combine first four ingredients in a heavy saucepan over high heat. Bring to a boil. Reduce heat to medium, cover and simmer about 20 minutes, or until apples are tender. Uncover and cook ten minutes longer, stirring frequently, until mixture thickens. Mash with a potato masher until chunky applesauce forms. Stir in sugar and spices. Transfer to a bowl, cover and chill overnight.
For chicken vegetable soup, stir in 2 cups diced cooked chicken breast in with the milk-flour mixture.
