Low Sodium Recipe
1 can low salt chicken broth
1 cup white rice
1/2 cup chopped tomatoes
1/2 cup chopped green pepper
1 tablespoon butter
2 tablespoons low-salt tomato sauce
Jalapeno pepper (optional)
Boil low salt chicken broth. Add rice.
In frying pan with butter, saute tomatoes and green pepper. When rice is done, put it into the frying pan.
Add tomato sauce and 1/2 cup chicken broth that the rice was cooked in.
Simmer on low heat 20 minutes until flavor can be tasted in the rice.
Recipe makes 6 servings
