Fiesta Red Potatoes

If you prefer a little less heat in the fiery potatoes, use only one jalapeno or serve them with fat free sour cream.

Recipe Ingredients

4 medium red potatoes, cut into one-half inch cubes
1 medium onion, thinly sliced
2 jalapeno peppers, seeded and chopped
1/4 teaspoon salt free seasoning blend
1/4 teaspoon pepper
1 tablespoon canola oil
2 small tomatoes, chopped

Recipe Directions

Red potatoes In a large nonstick skillet coated with nonstick cooking spray, saute the potatoes, onion, jalapenos, seasoning blend and pepper in oil for 30 to 35 minutes or until potatoes are tender.

Stir in tomatoes; heat through.

Note: When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands. Avoid touching your face.
