Clay Pot Roasted Garlic

Ingredients:
Two large whole garlic bulbs
2 tablespoons olive oil

Directions:
Soak clay pot and its cover in water at least 15 minutes.

Cut off about 1/2-inch from the top of bulbs and remove some of the outer papery covering.

Brush entire bulb with oil and season with salt and pepper to taste.

Place bulbs cut side up in pot. Cover and place in cold oven.

Turn on oven to 350-degrees and bake one hour.

Brush bulbs with additional oil and bake another 15 minutes.

Recipe makes six servings.
