Beef Goulash Soup

A single teaspoon of unsweetened cocoa powder contributes a hint of New World uniqueness to an Old World Hungarian goulash.

Ingredients:
6 ounces boneless beef sirloin steak
1 teaspoon olive oil
One medium onion, cut into thin wedges
2 cups water
One 14-ounce can beef broth
One 14-1/2-ounce can low-sodium tomatoes, undrained and cut up
1/2 cup thinly sliced carrot
1 teaspoon unsweetened cocoa powder
One clove garlic, minced
1 cup thinly sliced cabbage
1 ounce dried wide noodles (about 3/4 cup)
2 teaspoons paprika
1/4 cup fat-free dairy sour cream

Directions:
Trim fat from beef. Cut beef into 1/2-inch cubes. In a large saucepan heat olive oil over medium-high heat. Cook and stir beef in hot oil over medium-high heat about 6 minutes or until beef is browned. Add onion wedges; cook and stir about three minutes or until tender.

Stir in the water, beef broth, undrained tomatoes, carrot, cocoa powder, and garlic. Bring to boiling; reduce heat. Simmer about 15 minutes or until beef is tender. Stir in the cabbage, noodles, and paprika. Simmer for five to seven minutes more or until noodles are tender but firm. Remove from heat; stir in sour cream until combined. Makes four 1-1/2-cup servings.
