Yellow Squash
Ingredients:
1-1/2 pounds yellow zucchini or crookneck squash
1/2 teaspoon oregano
1 teaspoon unsalted butter
Directions:
Place squash in a steamer basket over boiling water.
Cover saucepan and steam five minutes, or until just tender.
Stir in butter, oregano and salt and pepper to taste before serving.
Recipe makes four servings.
