Microwave Almond FudgeIngredients:1/2 cup cocoa 3-1/2 cups powdered sugar 1/2 cup unsalted butter 1/4 cup milk 1 teaspoon vanilla extract 1/2 cup chopped almonds Directions: Place first five ingredients in a microwave-safe bowl. Cook on high for about 2 minutes. Remove from microwave and beat until smooth. Stir in almonds. Pour into a buttered 8 inch square pan. Let cool or refrigerate until firm, then cut into squares. Recipe makes 20 servings.
