Potatoes with Lime and Green Chilies

Many wouldn't think of lime with potatoes, but you might be surprised at the pleasing combination in this low-sodium recipe! Give it a try! If unsure, make one-half a recipe first.

Recipe Ingredients

1 pound of red potatoes, scrubbed and quartered
1 tablespoon unsalted butter or margarine
1 tablespoon lime juice
1 green chili, seeded, rinsed

Recipe Directions

Place potatoes in a steamer basket over boiling water. Cover saucepan and steam 15 minutes or until tender. Drain potatoes and transfer to a bowl. Melt butter in a heavy saucepan over low heat. Stir in lime juice and chili and simmer one or two minutes. Discard chili and pour lime mixture over potatoes. Season lightly with light salt or salt substitute to taste and toss.
