Potatoes Anna
Low Salt-Sodium Recipe
By Fitness and Freebies
Anna potatoes, or Pommes Anna, is a classic French dish cooked in a very large amount of melted butter. This recipe gives you that flavor without all that butter.
Recipe Ingredients
2-3/4 large yellow fleshed potatoes, peeled
3 ounces unsalted butter, melted

Recipe Directions
Preheat oven to 425 degrees. Cut potatoes into very thin slices, and pat dry with absorbent paper. Brush butter generously over 10-inch round enamel-coated cast iron pan with sloping sides, or an ovenproof pie plate. Place a layer of overlapping potato slices over base of prepared pan. Brush with butter, and season with salt and pepper to taste. Repeat layering until all slices are used, ending with butter. Cover with foil, and bake in hottest part of oven 20 minutes.
Remove foil, and bake another 30 minutes or until top is crisp and golden brown and potatoes are cooked through. Turn onto plate, cut into wedges to serve.
