Potatoes Anna
Low Salt/Sodium Recipe

Anna potatoes, or Pommes Anna, is a classic French dish cooked in a very large amount of melted butter. For that reason (even though the butter is eventually discarded), and because the initial preparation is quite meticulous and labor intensive, they are seldom prepared today in their original fashion.

Ingredients:
2-3/4 large yellow-fleshed potatoes, peeled
3 ounces unsalted butter, melted

Directions:
Preheat oven to 425 degrees. Cut potatoes into very thin slices, and pat dry with absorbent paper. Brush butter generously over 10-inch round enamel-coated cast iron pan with sloping sides, or an ovenproof pie plate. Place a layer of overlapping potato slices over base of prepared pan. Brush with butter, and season with salt and pepper to taste. Repeat layering until all slices are used, ending with butter. Cover with foil, and bake in hottest part of oven 20 minutes.

Remove foil, and bake another 30 minutes or until top is crisp and golden brown and potatoes are cooked through. Turn onto plate, cut into wedges to serve.
