Lemon-Mint Strawberries

Lemon zest and lemon juice combined with sugar, water and lots of fresh juicy strawberries with mint added for a finishing touch of elegance.

Recipe Ingredients

1/4 cup sugar
1/4 cup lemon zest, cut into thin strips
1 tablespoon lemon juice
1/4 cup water
2 cups strawberries, hulled and halved
1 tablespoon fresh mint, chopped, or 1/4-teaspoon dried

Recipe Directions

lemon mint Bring first four ingredients to a boil in a heavy saucepan over medium high heat. Simmer five minutes, stirring frequently. Remove from heat and place saucepan in cold water to cool. Pour syrup over strawberries. Sprinkle with mint and toss. Recipe makes 4 servings.
