Rum adds just the right flair to make this glaze extra special. Just use the option of rum extract if you prefer to keep things alcohol free.

Recipe Ingredients

1 cup orange juice
3 tablespoons dark rum, or 1-teaspoon rum extract
1 tablespoon honey
2 tablespoons sugar
3/4 pound pineapple chunks, drained

Recipe Directions

pineapple Combine first three ingredients in a small bowl. Mix well and set aside. Combine sugar and pineapple in a bowl and toss.

Heat a heavy nonstick skillet over high heat. Add pineapple to hot skillet and cook two to three minutes or until sugar caramelizes to golden brown, shaking skillet occasionally for even browning. Stir in orange mixture and bring to a boil. Using a slotted spoon, remove pineapple to individual dessert bowls. Boil liquid one to two minutes or until mixture is thickened. Spoon sauce over pineapple. Serve warm.
