Recipe Ingredients

1/2 orange
3/4 cup cranberries, coarsely chopped
1 apple, peeled and diced
1/4 cup sugar
2 ounces seedless grapes, sliced
2 ounces unsweetened pineapple chunks, finely chopped

Recipe Directions

Using a vegetable peeler, peel orange zest from orange and chop finely. Using a sharp knife, peel white pith from orange. Remove membranes from orange segments. Discard pith and membranes and chop segments. Combine chopped orange segments and remaining ingredients in a mixing bowl and toss. Cover and chill until ready to serve.

Cranberry Relish Salad

Ingredients:
One orange, peeled and segmented
1 teaspoon orange zest, minced
One tart apple, peeled and cored
1 cup cranberries, coarsely chopped
1/2 cup sugar
1/4 pound seedless grapes, halved
1/2 pound unsweetened pineapple chunks

Directions:
Combine all ingredients in a bowl. Cover and chill until ready to serve. Recipe makes about 4 low salt/low sodium servings.
