Spiced Apple and Bramble Sauce
Low Sodium Recipe
Apples and blackberries cooked together and spiced with mixed spice. Delicious sauce for pancakes, waffles, ice cream etc. Watch carefully towards the end of the cooking time so that this sauce doesn't burn.
1 pound of cooking apples, peeled, cored and roughly chopped
5 ounces blackberries in apple juice
1/4 teaspoon * mixed spice
Put the chopped apple, the juice from the blackberries and the mixed spice into a saucepan. Cook, covered, over a gentle heat, shaking the pan frequently, for five to ten minutes, or just until the apples collapse into a puree. Tip the contents of the pan into a bowl and allow to cool.
Add the blackberries and stir gently so as not to break up the fruit too much. Transfer to a serving dish and refrigerate until needed.
*The 'mixed spice' of British cookery is primarily used in sweet baking and is a fragrant reminder of Christmas recipes. It typically includes cinnamon, nutmeg, ginger, and cloves or allspice.
