Microwave Almond Fudge
Low Sodium Recipe
Almond and chocolate - yummy, especially in this fudge that includes chopped almonds for almond flavor - and crunch - along with their many nutrients. Delicious chocolate flavor comes from cocoa powder.
1/2 cup cocoa powder
3-1/2 cups powdered sugar
1/2 cup unsalted butter
1/4 cup milk
1 teaspoon vanilla extract
1/2 cup chopped almonds
Place first five ingredients in a microwave-safe bowl. Cook on high for about 2 minutes. Remove from microwave and beat until smooth. Stir in almonds.
Pour into a buttered 8 inch square pan. Let cool or refrigerate until firm, then cut into squares.
