Snow Covered Almond Crescents
Low Salt/Sodium Recipe

Ingredients:
1 cup unsalted butter, softened
1-1/2 cups powdered sugar
1/2 teaspoon almond extract or 2-teaspoons vanilla extract
1-3/4 cups all purpose flour
1/4 teaspoon salt, optional
1 cup quick or old fashioned oats, uncooked
1/2 cup almonds, finely chopped

Preheat oven to 325 degrees.

Directions:
Beat butter, 3/4-cup powdered sugar and almond extract in a bowl until well blended. Add flour and salt and mix until well blended. Stir in remaining ingredients. Measure tablespoonfuls of dough and shape into crescents.

Bake on an ungreased cookie sheet about 15 minutes or until bottoms are light golden brown. Transfer to a wire rack. Sift remaining powdered sugar generously over warm cookies. Cool completely. Recipe makes 18 low salt/sodium servings.
