Creamy Tuna Melt

Low Fat Recipe - Fight the Fat!


Cook onion and celery, add tuna with cottage cheese, mayonnaise, lemon juice and garlic powder. Spread this mixture over English muffins and broil.

Recipe Ingredients

2 cups celery, diced
1/2 cup onion, chopped
12 ounce can of tuna packed in water
1-1/2 cups low fat cottage cheese
1/2 cup reduced fat mayonnaise
1 tablespoon lemon juice
1/4 teaspoon garlic powder
3 English muffins
1 cup shredded Cheddar cheese

Recipe Directions

Can of tuna draining Cook onion and celery in a non-stick skillet until the onion is tender, about two minutes. Drain the tuna and add it to the skillet along with the cottage cheese, mayonnaise, lemon juice, and garlic powder. Stir well. Remove the pan from the heat and set aside.

Spray a 13 x 9-inch glass baking dish# with non-stick spray. Split the English muffins in half and place side by side in dish. Spread the tuna mixture evenly over the muffins and sprinkle with the cheese. Broil until the cheese melts, two to three minutes. If you like your English muffins crunchy, toast them before placing in baking dish. Serve at once.

Recipe makes 6 servings Creamy Tuna Melt.

Egg Free Mayonnaise: In a blender, combine 1 block of silken tofu (rinsed and drained), 2 tablespoons olive oil, 1 tablespoon mustard, 2 cloves garlic, 2 teaspoons vinegar, 2-1/2 teaspoons sugar and 1/4 teaspoon salt. Blend until smooth. Makes 1-1/2 cup.
