Creamy Tuna Melt
Low Fat Recipe

Ingredients:
2 cups celery, diced
1/2 cup onion, chopped
12 ounce can of tuna, packed in water
1-1/2 cups low-fat cottage cheese
1/2 cup reduced-fat mayonnaise
1 tablespoon lemon juice
1/4 teaspoon garlic powder
Three English muffins
1 cup shredded Cheddar cheese

Directions:
Cook onion and celery is a non-stick skillet until the onion is tender, about two minutes. Drain the tuna and add it to the skillet along with the cottage cheese, mayonnaise, lemon juice, and garlic powder. Stir well. Remove the pan from the heat and set aside.

Spray a 13 x 9-inch glass baking dish with non-stick spray. Split the English muffins in half and place side by side in dish. Spread the tuna mixture evenly over the muffins and sprinkle with the cheese. Broil until the cheese melts, two to three minutes. If you like your English muffins crunchy, toast them before placing in baking dish. Serve at once.
