Tempting Teas

heated, it will cool you; if you are depressed, it will cheer you; if you are exhausted, it will calm you. ~William Gladstone~ Ginger TeaIngredients:1-tablespoon plus 1-teaspoon black tea leaves 1/4 cup fresh ginger, thinly sliced 2 quarts boiling water 1-tablespoon plus 1-teaspoon sugar Combine tea leaves and all but 4 ginger slices in a tea pot. Add boiling water and steep about 5 minutes. Strain tea into cups. Serve tea with a slice of ginger and sweeten to taste. Add teabags and remove from heat. Cover pan and let stand 15-20 minutes to make a very strong tea. Let cool before serving. Pour over ice cubes. Sweeten with sugar or honey to taste. Let stand ten minutes. Remove tea bags. Add honey and mint and mix well. Mix juices in a large container. Add tea mixture and refrigerate until ready to use. To serve, fill glasses with ice cubes and add 1/2-cup tea concentrate. Fill glass with carbonated water. Recipe makes six servings.
