Ginger Tea

Ingredients:
1-tablespoon plus 1-teaspoon black tea leaves
1/4 cup fresh ginger, thinly sliced
2 quarts boiling water
1-tablespoon plus 1-teaspoon sugar

Combine tea leaves and all but 4 ginger slices in a tea pot. Add boiling water and steep about 5 minutes. Strain tea into cups. Serve tea with a slice of ginger and sweeten to taste.

Iced Zinger Tea

Ingredients:
2 quarts water
Four Red Zinger tea bags, or Lemon Zinger

Directions:
Bring water to a boil in a heavy nonreactive saucepan. Add teabags and remove from heat. Cover pan and let stand 15-20 minutes to make a very strong tea. Let cool before serving. Pour over ice cubes. Sweeten with sugar or honey to taste.

Sage Tea

Ingredients:
4 cups water
16 sage leaves, fresh or dried
1 tablespoon plus 1 teaspoon sugar

Directions:
Bring water to a boil. Add sage leaves and remove from heat. Let steep about three minutes, or longer if stronger tea is desired. Strain and serve sweetened with sugar to taste.

Icy Fruit Tea

Ingredients:
Four tea bags
1 cup boiling water
1/2 cup honey
1/4 cup fresh mint leaves, crumbled
1 cup orange juice
3/4 cup pineapple juice
1/4 cup lime juice
Ice cubes
1 quart plus 2 cups carbonated water

Directions:
Place tea bags in a medium bowl and add boiling water. Let stand ten minutes. Remove tea bags. Add honey and mint and mix well. Mix juices in a large container. Add tea mixture and refrigerate until ready to use. To serve, fill glasses with ice cubes and add 1/2-cup tea concentrate. Fill glass with carbonated water.

Recipe makes six servings.

Russian Tea

No tea can compare to this zesty Russian brew!

Ingredients:
Two tablespoons whole cloves
8 cups water
Ten tea bags
1/2 cup sugar
2 cups orange juice
2 cups peach juice
Juice of one lemon

Directions:
Boil cloves in water three minutes. Add tea bags and let steep five minutes. Strain. Add sugar and juices then reheat. Serve hot.

Recipe makes 24 servings.
