Low Fat Recipe - Fight the Fat!

These are packed full of healthy, energizing ingredients including currants, apricots, whole wheat flour, wheat germ, peanut butter, honey and oats.

Recipe Ingredients

1 cup currants
1 cup dried apricots
1/2 cup fat free milk
1/4 teaspoon baking powder
3/4 teaspoon sea salt (regular is fine if you prefer)
1/4 teaspoon baking soda
3/4 cup 100-percent whole wheat flour
1/3 cup wheat germ
1/2 cup 100-percent pure peanut butter
3/4 cup liquid honey
1 cup large flake oats

Recipe Directions

Stir all ingredients together with a wooden spoon.

Drop by spoonfuls onto a cookie sheet.

Bake Energy Cookies at 375-degrees for 12 minutes.

Nutrition Notes:

  • Currants contain more than 5 times the vitamin C of oranges, are as high as banana in potassium and contain more phosphorus and potassium than any other fruit.
  • Apricots are a great source of Vitamin A.
  • Honey includes small amounts of a wide array of vitamins and minerals, including niacin, riboflavin, and pantothenic acid, along with minerals such as calcium, copper, iron, magnesium, manganese, phosphorus, potassium and zinc.
