High Fiber Prune Muffins

This satisfying high fiber muffin, mellow-sweet with prunes and crunchy with walnuts, is simple to prepare. Make a double batch and freeze half and you will always be prepared for a nutritious snack on the go.

Ingredients:
1/2 cup bran
1/2 cup prune juice
1/2 cup milk
1/4 cup packed brown sugar
Two eggs, lightly beaten
1-1/2 cup flour
2 teaspoons baking powder
1 teaspoon nutmeg
1/2 teaspoon salt
1/4 cup melted butter or margarine
1 cup pitted prunes, coarsely chopped
1/2 cup chopped walnuts

Directions:
In a large bowl, mix bran, prune juice, milk and sugar; set aside ten minutes.

Stir in eggs, flour, baking powder, nutmeg and salt to blend thoroughly.

Stir in butter, then prunes and walnuts.

Spoon, equally divided, into twelve 2-3/4-inch greased or paper lined muffin tin cups.

Sprinkle with additional bran, if desired.

Bake in a 425-degree oven 15 to 20 minutes until lightly brown and springy to the touch.

Cool on rack.

Recipe makes one dozen muffins.
