Sun-Dried Tomato Dip
Low Carbohydrate Recipe
Sun dried tomato dip with balsamic vinegar, sour cream, mayonnaise, yogurt, garlic, basil and olives.
1/4 cup sun dried tomatoes
1/3 cup sour cream
1/3 cup mayonnaise
1/3 cup plain yogurt
2 cloves garlic, finely minced
1 tablespoon fresh basil, chopped (or 1-teaspoon dried)
1/4 cup green olives, chopped
Place tomatoes in a small bowl. Add balsamic vinegar until just covered. Allow to soak for about an hour.
Remove tomatoes from vinegar and drain well.
Chop finely and mix with other ingredients. Keep in refrigerator until ready to serve.
