Low Carbohydrate Recipe
Lean ground beef with taco seasoning, green onion, eggs, garlic and sharp Cheddar cheese.
1-1/2 pound lean ground beef
1 package taco seasoning mix
1 green onion, finley diced
2 eggs (or 1/2-cup liquid egg substitute)
1 clove garlic, minced (optional)
1 block sharp Cheddar cheese, cut into small cubes
Preheat the oven to 425-degrees.
Beat eggs and mix all ingredients except the cheese together. Mold a tablespoon of meat around a cube of cheese to form a small shaped meatball. Repeat with all meat.
Place on edged cookie sheet (sprayed with nonstick cooking spray) and bake at 425-degrees for seven to ten minutes or until meat is done and cheese has melted.

At the turn of the 19th & 20th centuries in the U.S., meat was inexpensive and plentiful. Since meat was inexpensive, the Italian immigrants who brought their recipe for polpette (meatballs) to America paired the larger sized meatballs with pasta.
