Taco Meatballs

Lean ground beef with taco seasoning, green onion, eggs, garlic and sharp cheddar cheese.

Recipe Ingredients:
1-1/2 pound lean ground beef
1 package taco seasoning mix
1 green onion, finley diced
2 eggs
1 clove garlic, minced (optional)
1 block sharp Cheddar cheese, cut into small cubes
Recipe Directions
Preheat the oven to 425-degrees.
Beat eggs and mix all ingredients except the cheese together. Mold a tablespoon of meat around a cube of cheese to form a small shaped meatball. Repeat with all meat.
Place on edged cookie sheet (sprayed with nonstick cooking spray) and bake at 425-degrees for seven to ten minutes or until meat is done and cheese has melted.

Recipe makes 10 to 15 servings
Serving size: 1 meatball
Less than 1g carbohydrate per meatball.
