Low Carbohydrate Recipe
First you toast mixed nuts without peanuts. Then blend a mixture of butter, egg whites, sweetener and salt and fold the nuts into this mixture, bake.
3-1/2 cups mixed nuts without peanuts*
1/2 cup butter
2 egg whites
1 cup measurable sweetener (such as Splenda)
Salt to taste (omit if using salted nuts)
Preheat oven to 325-degrees.
Toast nuts on jelly roll pan for ten minutes. Remove nuts and melt butter on pan.
Beat egg whites until soft peaks form; add Splenda and salt and beat until glossy. Fold toasted nuts into egg white mixture. Spread nuts onto jelly roll pan.
Bake for 30 minutes at 325-degrees turning nuts with spatula every ten minutes.
* No-salt or lightly salted nuts are recommended.
Recipe makes 3 party bowls of nuts. Serving size: 6 nuts. 3g carbohydrates.
Variation: Swedish Pecans
1 egg white
2 cups pecan halves
2/3 cup Splenda
2 teaspoons cinnamon
2 tablespoons DaVinci Gourmet Sugar Free Vanilla Syrup
Heat oven to 300 degrees. Grease a cookie sheet. Mix egg white and pecans until pecans are coated and sticky. Mix other ingredients and stir into nuts. Spread out in single layer and bake 30 minutes until toasted. Total: 51 carbs.
