Once again, cauliflower to the rescue; this time for a "faux" rice! Use this version of "rice" in any recipe that calls for rice!
10 ounce bag frozen cauliflower
Butter, to taste
Salt and pepper, to taste
Microwave cauliflower until done; drain well.
Put in food processor with butter.
Salt and pepper to taste and then process in short bursts until mixture looks like rice.
