Cheese Chips
Ingredients:
Thin slices of Provolone cheese
A non-stick pan
Directions:
Place one slice of cheese on the non-stick pan and cook on low to medium heat til bubbly and the browning from the other side comes through. Turn and cook on the other side. Let cool and break into pieces. These cheese chips are good plain, but they're also good dipped in low carb dips, such as a dry vegetable soup mixed with sour cream.
Tuna Slaw
Ingredients:
One shredded cabbage
1/2 cup mayonnaise
Can of tuna packed in water
Salt and pepper (to taste)
Directions:
Drain the water from the tuna. Mix all the ingredients together - a great
lunch combination.

Creamy Chicken Soup
Ingredients and Directions:
Saute a little broccoli, green beans, and chopped mushrooms in a little butter (gives the soup a little more flavor) until tender but not mushy.
Add some cream and chicken stock (plain water could be used), some chopped chicken, and zucchini grated on the smallest part of the grater. Simmer this soup mixture for about 10 minutes.
Note:
The grated zucchini gives the illusion of a nice thick base.
Quick Quiche
Quiche is a really good way to have eggs, however, the crust is not suitable for a low carb diet recipe. Use nonstick cooking spray instead and thoroughly spray your pie pan.
Ingredients and Directions:
Break a half dozen eggs into a bowl and beat them with a mixer until they are frothy. Pour them into the pie pan. From here, use your imagination and combine some of the following for a yummy crustless quiche:
Ham chopped in cubes
Grated cheeses
Broccoli flourettes
Chopped asparagus
A few chopped bell peppers
Chopped celery chopped
Grated zucchini
Fill the egg mixture with one or more of these ingredients and bake for about 30 minutes, or until set and lightly browned.
