Shrimp Stuffed Eggs Low Carbohydrate Recipe
Ingredients:
1 pound shrimp boiled, peeled and chopped fine
1/4 cup mayonnaise
1 packet sugar substitute
1/8 teaspoon celery seed
1/8 teaspoon salt
1 tablespoon chopped chives
1 dozen small eggs hard-boiled, peeled
Directions:
In a medium bowl, mix shrimp, mayonnaise, sugar substitute, celery seed, salt and chives.
Halve eggs lengthwise; scoop out yolks (save for another use, such as a topping for salads). Fill whites with shrimp mixture. Refrigerate before serving.
This recipe yields 24 servings.
