Cheese Stuffed Chicken Rolls

Ingredients:
Four boneless chicken breast halves without skin
1/4 teaspoon salt
1/4 teaspoon pepper
3 ounces Monterey Jack cheese - sliced
1 tablespoon butter - melted
1/2 cup salsa
2 tablespoons cilantro, minced - optional

Directions:
Heat oven to 375-degrees

Grease a 9-inch square pan or baking dish.

Flatten each breast half to 1/4-inch thickness, sprinkle with salt and pepper.

Divide cheese evenly on each breast.

Roll chicken around cheese, folding in sides.

Brush each roll with melted butter and place seam side down in dish.

Bake uncovered for about 30 minutes.

Top with salsa and cilantro. Serve.
